To make the tea syrup:

Brew the tea and leave to steep for 15 minutes. Strain and add the sugar. Ensure syrup is cool before using.

Summer Strawberry Sour

50ml Seedlip Garden
25ml strawberry syrup (see recipe below)
5ml fresh lemon juice
25ml egg white

Add all ingredients to a cocktail tin and dry shake. Add cubed ice to the tin and shake a second time. Strain into a chilled sour glass and serve.

To make the strawberry syrup: you can purchase good quality syrups but I would recommend, while we have the season, making your own – it’s quite simple.

250g fresh strawberries, topped
100g caster sugar
100g Verjus

Combine the strawberries and sugar in a sealable container, and leave in the fridge overnight to infuse. Blend the strawberry sugar mix with Verjus then strain through a muslin cloth. Store syrup in the fridge.

Blue Lagoon

This is a sweet orange based cocktail with a great colour contrast.

170 ml unsweetened Orange Juice
20 ml 1883 Toasted Marshmallow syrup
10 ml 1883 Blue Curacao syrup
Crushed ice

Combine the Orange Juice, Toasted Marshmallow and Ice (enough to fill the glass) in a glass and stir well. Gently pour the Blue Curacao into the glass once mixed - it will sink to the bottom and create an intriguing blue layer.

Garnish with a slice of orange. This recipe makes 250ml glass.
